Tanya Papura, M.S., R.D. L.D.N., part-time faculty is the instructor for ND 301 parts B & C, Food Systems Management (Production & marketing) as well as ND 379 III and IV, Food Systems Management (Cost Accounting & Layout & Equipment). She is currently employed as a consultant dietitian for a long-term care facility "Mercy Center." Her prior work experience includes full time employment for several years as a food service director/clinical dietitian in an area skilled nursing facility "Mercy Center" and long term hospital "Mercy Special Care." In these positions, she operated the food service departments and performed clinical nutrition services for both inpatients/residents and outpatients. Tanya functioned as the dietitian upon the opening of the Skilled Nursing Unit at Mercy Hospital, Wilkes-Barre ensuring that all state requirements were met for both the unit and the food service prior to department of health approval.
In the past, she has worked at Hunterdon Medical Center in Flemington, New Jersey in the capacities of: clinical dietitian, community dietitian, and acting chief clinical dietitian. At that time had actively worked as a member of the Diabetes Care Team and Renal Team. She performed training seminars for community nursing students and the RWJ residency program at the hospital. Tanya also ran a "Lighten Up" weight loss program in her community dietitian capacity at the hospital.
