Nutrition & Dietetics: Coordinated Program Facilities

All nutrition students have the opportunity to conduct hands-on work in the world-class Keith J. O’Neill Center for Healthy Families. The center features:

  • A fully equipped Healthy Demo cooking classroom
  • A food science lab with testing equipment, blast chiller and rethermalization unit, metabolic kitchen, ingredient room, and food-prep area
  • A sensory evaluation lab, allowing students to test food made in the food science
  • A state-of-the-art computer lab with program-specific software


In addition, the O’Neill Center houses the Human Performance Laboratory,which was designed to enhance learning and promote cutting-edge research. New equipment is added frequently to maintain optimum capability for research as well as for testing and monitoring student athletes,Olympic athletes, and local sports teams for aerobic capacity, power, isokinetic strength, pulmonary function, air quality, and more.
